17 years!!
In the Summer of `95 I had the privileged of going on my first overseas mission trip with my church youth group. We went to Jamaica and while there we met up with 4 there youth groups from other church's from across the US. while there I because friends with a girl named Jessica. She was from a youth group in Ohio and we had so much fun together that week. When the trip was over we promised to write each other and to call and swore that we would be forever friends! Well I am happy to say that we followed through on that promise and still remain friends today. We have gone to visit each other over the years. I have been to OH and she has come to see me in NC. Over the years we have talked, laughed cried and encouraged one another and prayed for one another. As we have moved into adulthood we have not been able to go and visit one another as much as we would like. And as we were talking a few months ago we realized that we had not actually seen each other in about 10 years! We decided then and there that we must put an end to that and plan a visit! So this past weekend Jessica hopped on a plane and flew to CT to see me! We had such a fun time. We talked non stop! It is rare in life when you can find a friend who you can talk about anything with! God one minute,, husbands the next, then and 10 min later you can be trading recipes and talking about the latest news in US weekly! And all this after not seeing each other for 10 years! It felt like we had never missed a beat! I am very blessed to have such wonderful friends and I can't believe that this particular friendship has lasted over 17 years! Jessica is such a wonderful woman and am so lucky to call her my friend! I thank God that he put her in my life and I am looking forward to many more years of fun and fellowship with such a beautiful woman both inside and out!

Three Ring Circus!
While life at the Corbett's may sometimes resemble a three ring circus, last month Joe and I had the chance to actually go to see a three ring circus! Since Joe and I have been married we have talked about going to see Ringling Brothers and Barnum and Bailey circus! So for Joe's birthday last month I was able to get tickets for the two of us to go and see RB&BB! It was so fun! We had a great night and while we were the only adults there without kids, we made sure we were kids at heart and loved watching every act!
And let me just say it was quite a show, I haven't been to the circus in years and wasn't sure what to expect but they had everything you could think of! For over two hours we were amazed as act after act came out! They didn't miss a thing! It was such a fun date night for the two of us and a great way to celebrate Joe's special day! Book Club
This summer I decided to try and get some good reading in and I am happy to say that I managed to make my way through two rather large novels written by Francine Rivers. The first book was called "Her Mothers Hope" and the second part of the two book series was "Her Daughters Dream". I have to say that I really enjoyed both books, and more than that it really gave me a few things to think about.
Often in life we don't understand what makes someone who they really are. What their childhood was like and what makes them act certain ways or show love in ways that are often time unrecognizable. That is exactly what these two books do.
"Her Mothers Hope" and "Her Daughters Dream" explore the complicated relationship between mother and daughter over several generations. The women of this story go through so much that at times you just want to cry with them as they face the harsh circumstances that life brings them. Ultimately each woman is forced to face her faulty but well meaning desire to help her daughter find her God given place in this world. Francine Rivers has written a wonderful story and as always her writing is completely captivating and life changing. She has the ability to take you on a journey and somehow always teach you something about your relationship with others and most importantly your relationship with God. If you are looking for a good read and one that will get your heart and head engaged I can't recommend it enough! Happy reading!

Photo Friday: Our Little Tomato!
Here is the latest picture of our little tomato! We had an ultrasound this past Monday but as you can see baby wasn't the most cooperative (I hope this is not an indication of this child's personality all the time or else mom and dad are in for it!). Baby C didn't feel like moving positions and stayed face down the entire time which made getting a good look at the heart and profile a challenge. The good news is that we get to go back in less than two weeks and see little baby c again! More pics for mom and dad to be... yahoo!

Photo Friday: Commemorating 9/11
A few weeks ago we celebrated the 10th anniversary of 9/11. It is so crazy to me that it was so long ago. I can still remember where I was when I all the events unfolded that day. To commemorate the events of that day there was one event that stood out to me. It probably stood out to me because my brother Bill created the entire event. He created it for UNCW students to have a way to show there respect, appreciation and remembrance of that day.
On the afternoon of Friday, Sept. 9, more than 1,500 University of North Carolina Wilmington students, faculty and staff came together in formation to represent the twin towers and the pentagon in commemoration of the 10th anniversary of the 9/11 tragedy. The unique event was created and organized by Bill Hawks. Each member of the UNC Wilmington family held up the name of a victim of the terrorist attacks in honor of all of those who lost their lives, and the first responders and veterans who continue to serve the United States.
I am so proud of my little brother, who isn't so little anymore. He did such a great job at creating an event that meant so much to so many.

Sweet and Saucy
Last night I made one of the Corbett favorites for dinner and I thought that I would share the recipe as it was so good! I got this recipe from the Pampered Chef cooking light cook book and we just love it! They are sweet and saucy turkey meatballs!
1lb of 97% fat free turkey
1 egg white
1/4 bread crumbs
1/4 of an onion chopped up
1 tbs of dried thyme
1 pressed garlic clove (I use a little extra and chopped it!)
Combine these ingredients and then make your meatballs and place them on a baking sheet in the oven at 400 for 15 min.
In a separate bowl make your sauce by combining:
1 can of cranberry sauce
1/4 cup of orange marmalade
1/4 cup of ketchup
2 tbs of brown sugar
1 tbs of worcestershire sauce
After the meatballs have cooked 15 min you pour the sauce that you have made on top of them and then cook for another 15 min. I recommend putting foil on your pan so you don't ruin it! Once you pull them out,,,,enjoy! I always make a double batch as they are amazing and can be frozen for later use! I have also placed them in crock pot with the extra sauce after I have baked them to keep them warm and then served them at a party we had....they were so good, we ran out! The best part is, is that they are healthy! No guilt eating these! Enjoy

Photo Friday: Annoucing the Big News
So it worked out that we officially found out we were pregnant right before Fathers Day. We decided it would be the perfect day to tell our families about Baby C. Since I couldn't tell my family in person I wanted to make it extra special. So I had my best friend Meredith deliver a special cake to my mom and dad who were visiting my sister Ashley, her husband Neil and my nephew Fletcher. The cake had a very special message on it and I was lucky enough to have Meredith's now Finance video the whole thing for us! It was so fun. I was on skype with them as well, so it was like I was really there.

Wedding Bells!
I am so excited to announce that my best friend Ms. Meredith Beeker has found her match and is now engaged to Mr. Chadwick Tucker! Meredith and I have been friends for the past 11 years and I am so lucky to have a friend like her. She stood by me the day I married Joe and has been apart of my daily life since we met in college. She has been my roommate and honestly really like a sister to me. We have laughed together and cried together and everything in between together.
I am so happy as I have prayed for years for her Mr. right and he is here! They have been dating for a year and Chad asked Meredith to marry him over labor day weekend with a most beautiful ring! Way to go Chad! Chad is a very lucky man and we are so excited to welcome him to our family. I am so thrilled for the day they will become man and wife and until then I can't wait to help plan and celebrate this special time in their lives! Congratulations!

Photo Friday: Little Feet
I have attached a few pics of baby C from our 11 wk apt. I know these things can be hard to see sometimes but we hope you can make it out. The baby is head down and butt up in the air. You can see little legs and feet off to the left of the rump! I can't believe that you can see little feet that early on! God is so good!
We can't wait until we can meet our little one, but for now we will continue to admire the pics that the Dr. has taken for us! And then there were 3!
Yes it is true....the Corbett family is growing! I apologize for just now getting back to the blog, but the past several months have been very overwhelming as we have begun the journey into parenthood! We could not be more thrilled that the Lord has chosen us to become parents. This is something that we have prayed very hard for and we feel so honored that the Lord heard our prayer and chose to give us the desire of our hearts. There is a lot to share about our journey in becoming parents but I will save that for another day. Today I just wanted to share our joy with all of you who keep up the the Corbett's and I promise that going forward I will not go 4 months without a blog update. Baby C is due this February and as of today I am 16 weeks pregnant and feeling pretty good! I will post pics of baby C later this week as well as catch you up on where we have been the past several months! Hope you are all doing well and we can't wait to share this journey with all of you!

The past few weeks have been a bit crazy for the Corbett's, filled with lots of good stuff, hard stuff, happy stuff and challenging stuff. Still Alive!
We are still alive! Sorry for the lack of blogging the past two months. Things have been kinda crazy and we are without laptop so blogging is a bit of a challenging. I do have some fun blogs that I have been working on and I my goal is to get them posted this weekend since I will have some free time! We are looking forward to celebrating the resurrection of our Lord and Savior this coming weekend and I hope Corbett's Corner will be updated soon as well!

4 Years!!
OK....so I clearly took the month of March off with blogging...just to let my mind veg....but I promise Corbett's Corner will once again have new posts in the month of April. So for my one post of this month I wanted to say a few words to my most amazing husband who the Lord has blessed me with! Today is our 4 year anniversary!

Thank you for all you do for me. Thank you for loving me even when I make it very hard!! Thank you for your constant support of anything I want to do, and anytime I am feeling down. Thank you for making me laugh and for holding me tight when i need to cry. Thank you for all the hard work you do to make our life better and for sacrificing for our future. Thank you for your patience and unending kindness. I am so blessed that the Lord has given me a husband who I not only love, but really truly like! I could go on and on but the bottom line is this......you are my best friend and I could not be happier that I get to spend the rest of my life with you! Photo Friday: Taking Reservations!
He did it! Yes he did....He made dinner!! Yahoo! Since we have been married I have been in charge of all dinners in the Corbett household, don't get me wrong I am not trying to throw Joe under the bus, he makes a killer breakfast for me every weekend and without my even asking....they are pretty amazing I have to say. But when it comes to dinner he's just not into it! So whenever I say "I don't want to cook...your in charge of dinner" he is happy to take me out for dinner or bring home a pizza or something. I'm not complaining about all the fabulous meals we have out, but it would be nice to just stay in and not have to cook ya know? Well last week it finally happened...without my knowing one of Joe's friends taught him how to make his own pasta sauce and came home and surprised me and made dinner! I couldn't believe it! I have to say that his sauce was AMAZING and I have informed him that he is now forever in charge of making the sauce in our house! I was able to take a few pics of the amazing moment in the Corbett kitchen so take a peek at the man in action! If you want to come over for dinner and to try his sauce out let me know, we are taking reservations! Its that Good!

When God Whispers...Or Hits you Upside the Head with a 2x4!
Ever have one of those moments when you know God is speaking to you? Like when you are sitting in a church service and you just know that someone told the pastor what was going on in your world so he customized the entire sermon just for you? A little over a week ago I had one of those experiences. For the greater part of a year now, Joe and I have been walking though an interesting journey. And as we walk and wonder what God has planned for us, we are often left feeling like God is being silent and more than anything we just want to hear from Him or have our prayers answered...or both...wink wink! As we have been walking in faith we have experienced many emotions, joy, sadness, anxiousness, fear, excitement, anger and hope. I find myself talking to the Lord and in prayer constantly about all of these feelings and wondering what in the world he has planned for us.
As I mentioned back in January, I am leading a woman's bible study at my church this spring called The Organic God. One of the topic of discussion this past week was about when God is silent with us and when he speaks to us. After studying the chapters, at the beginning of class I asked for prayer that I would be able to hear God as we are on an interesting faith journey at the moment. After prayer we had discussion time and it was wonderful. Right as we were about to leave, one of the women in my group said she had to share something that had just popped into her head. She said she wasn't sure why she was sharing it, but felt like she needed to share a certain scripture. She picked up her bible and began to read Ephesians 3:20-21 ...
Now to him who is able to do immeasurably more than all we ask or imagine, according to his power that is at work within us, to him be glory in the church and in Christ Jesus throughout all generations, for ever and ever! Amen
As the words poured from her lips it was like I was being hit upside the head with a 2x4! BAM!!! I knew that she shared that passage for me, not even knowing what I was walking through. Even more amazing she went on to share a story about this verse in her own life and wouldn't you know it, the story she shared was the EXACT thing that we are walking through right now! I couldn't help it, tears upon tears began to pour out of my eyes. Here I was asking to hear from God and the woman directly across the table from me spoke scripture right to me. Gods words to my ears and to my heart! God is so good! I have since claimed this verse as we continue to wonder and pray for what God is doing with the Corbett's. The one thing we do know is that whatever it is, it is going to be so much more than we could ever ask for or imagine, and that makes me so excited! Praise the Lord!
My prayer for those of you who may be eager to hear Gods voice in their life right now, is that you continue to pray and talk to the Father, and also that you would read His word. Snap Shot Saturday..... Breakfast love!
As you can see the past several Friday's I have had a hard time getting to the computer to get Photo Friday up...so I have decided that some weeks we may have "Snap Shot Saturday" instead! Either way I hope that my goal of sharing life with all of our friends and family will be accomplished in a fun and silly way!
As I promised I had more to share about our Valentines weekend together. One of the silly things I did to make sure my man knows how much I love him, was to make him breakfast in bed. I get extra sappy and make food that was heart shaped! This included heart shaped pancakes and heart shaped eggs! I used raspberry syrup to give it that extra touch of pink! Check it out!

Skinny Chicken Stroganoff
Here is another yummy favorite recipe that is loved at the Corbett house hold. I got this recipe from Pampered Chef...I love all of their stuff, but I really love the recipe books that I ordered from them. I have a few go to meals that i used all the time. It’s a delicious twist on beef stroganoff, and a few variations on the traditional ingredients keep it light.
I started by cooking 4 slices of bacon in a large skillet until crisp, crumbled it, and set it aside. (The actual recipe says to use turkey bacon, but I used what I had on hand.) Set the skillet aside for later use.
- 3/4 cup of reduced-fat sour cream
- 1/4 cup of flour in a small bowl.
- I gradually whisked in 1 can (14 ounces) of fat free/light chicken broth until the mixture was smooth.
- 1/4 teaspoon of salt
- 1/8 teaspoon of black pepper
- 8 ounces of pre-sliced mushrooms (you can buy them canned....save time that way!),
- 1 medium onion (1 cup),
- 1 pound of chicken sliced into 1/4-inch strips.
- 1 clove of garlic minced
Next, I returned the bacon crumbles to the skillet. I stirred in the sour cream mixture and brought it to a boil. I reduced the heat to medium and simmered the mixture for 3 minutes, stirring constantly. Finally, I stirred in 2 tablespoons of snipped fresh parsley and served the mixture over the egg noodles.
I know this sounds kinda complicated but it really isn't that hard...I promise! I hope you give it a try and let me know what you think! Happy eating!

LOVE
Thursday night I came home from work late and was surprised with 2 dozen long stemmed hot pink roses! This is the second time in two weeks to receive flowers from Joe.....I am just so spoiled! I took a quick pic so that I could share there beauty with all of you! This was just the start to our Valentines weekend which I will share about in another blog later this week. For now I will just say that I am so very grateful that the Lord has given me a spouse that truly loves Him and loves me. I pray that everyone one of my friends and family are feeling loved this silly yet fun holiday and most of all that we remember where true love comes from!
1 John 4:9-11 "In this the love of God was manifest among us, that God sent His on Son into the world, so that we might live through Him. In this is love, not that we have loved God but that He loved us and sent His Son to be the propitiation for our sins. Beloved, if God so loved us, we also ought to love one another."

What's a Roof Rake?!
Due to all of the snow here in CT many roofs are starting to cave in and leak! Not good! So we made the decision to head up top to get some of the snow off of the house today......I should say that Joe headed up, I was his trusted assistant and photographer on the ground! Most commonly used is a "Roof Rake" to remove snow from the tops of homes, as you can imagine they are sold out EVERYWHERE up here, which left Joe to make his own! Check out these pics I took of Joe hard at work making sure our house stays safe!

Day Dreaming....
With all of this snow and ice going on up here (and PS...we are getting another 10 inches today followed by more ice all day wed) I can't help but let my mind wonder and dream of laying on a warm beachsomewhere drinking margaritas! ahhhh!! I thought I would research a few destinations as to where I would like to go and here are a few pics of my favorite places i found while day dreaming in front of the computer!

Photo Friday! Icicles
Here are a few pics of the crazy icicles that are currently hanging on the side of my house!! I have to say that I had never seen real icicles before moving here. They are very impressive and some of them are even dare I say. . . "pretty"?! Just trying to find an upside to all of this cold. I have to say that all of this snow and ice is a constant reminder of how BIG God is and how intricate his designs are. There is no denying that all of creation is amazing even if I don't really like the cold and snow! The icicles are at least fun to look at if I have to be cold!

Breaking Records!
We have had record snow fall here in CT! First with the storm that hit a little over two weeks ago with a record breaking 30" at one time! The second record was broken just this morning....the snowiest month EVER on record for the state of CT! Yes that is right! Last night we received another 20" of snow! And that does not include all of the other little storms we have had over the past several weeks! It is literally like nothing I have ever seen before in my life...there is so much snow that they are running out of places to put it! Even the CT river has frozen over in several places...now that is cold! Hidding Under the Covers!
Hi friends, family and followers! So sorry I have been so slack on here the past few weeks....the snow and the cold have left me with little desire to do much of anything except for hide under the covers! I have lots of pics that I will make sure to get posted ASAP of our huge 3 feet snow storm a few weeks ago....it was insane!!!! Life is starting to pick up for us again now that the holidays are over. I begin teaching a new Bible study this week called the Organic God, which I am very excited about and I look forward to blogging about what I am learning on here so stay tuned. I am also attempting to start taking a Zumba class each week! I have to say that this should be VERY FUNNY....while I danced for many years as a child it has been a while since I have moved and grooved so I will have to let you know how that works out.....there will be no pictures or video to post of this I am sorry to say! (although I bet they would be hilarious!) This is Joe's busiest time of year at work so he has been working long hours and lets face it, any down time he has is spent shoveling allot of snow being that I am not that much help! He has also decided to read the Bible through again this year. He did this last year and really enjoyed himself and I have to say it takes allot of discipline...something that I lack in a major way! Sorry there isn't much exciting to report but I wanted to hop on here and let you know what we are up to! If you think of us please pray this snow stops! I am COLD! I am ready for spring and with several more weeks of winter still to go I am scared I might loose my mind hiding under the covers!

Snow Place Like Home!

Being that I now live in New England I am getting used to the fact that it IS going to snow and that I can't avoid it! So, whenever I head home to North Carolina I am more than excited that I will at least have a few days of no snow....or at least that is what I thought! Joe and I headed south this year for Christmas with my family. We had a wonderful time with everyone and it was so nice to be back in the south. We did get one thing for Christmas that we were not expecting this year in NC.....snow! I couldn't believe it! Here I was 800 miles south of CT and it was snowing! It was very cool for those who live in the area to have the snow as is dose not happen often.....but for me I could have gone without! It was a pretty snow and I have to say it did give Christmas a little extra something! So of course we had to take a few pics to commemorate the big event! Please enjoy!

Photo Friday: People I love!
This picture was taken over Christmas while I was back home in NC. One of my favorite things about heading south is spending time with the people I love. These are my grandparents Joy and Carl. They are two of the most wonderful people on the planet and I am so lucky to have them in my life. They are also two of the funniest people I have ever met and they always make me smile! Grandpa loves taking kisses from all of his grand kids and cheering on his favorite football team the Eagles! Grandma isn't afraid to shake things up once in a while, including margarita night out with the girls and a little dancing to Beyonce here and there! She also makes the best cinnamon buns and the best cookies in the world! I just love both of them and I am so grateful to have two grand parents who have made such an effort to be at all of my big life moments over the years . They really love all of their grand kids so unconditionally. They are truly a gift from the Lord and I am so blessed to know them!

Choosing to See
I recently read the book "Choosing to See" by Mary Beth Chapman and I have to say that I really enjoyed myself. Mary Beth is the wife of Stephen Curtis Chapman and the book is simply the story of her life. I found the book very refreshing as it was very open and vulnerable as she shares not only her joys but also her struggles. It was wonderful to read the testimony of someone who isn't afraid to share all of the hard stuff. She speaks openly about her struggles with depression, the joys of motherhood and adoption as well as the sadness and struggles that came with losing their five year old daughter a few years ago. I would encourage anyone to read this book as I think that anyone can relate to her on some level as she shares her faith journey.
As we are all walking our own faith journey filled with joys and sorrows it is nice to know that we are not alone in experiencing these moments along the way. Choosing to See is a reminded that we can go through these moments holding tight to our creator and the truth of his word.

Hello 2011!
Happy New Year!! I can't believe that it is actually January and that there is snow on the ground! Yikes!
I feel like 2010 flew by and with the beginning of a new year comes a time to reflect on the past year and look forward to what the year ahead may bring. 2010 was an interesting year for the Corbett's we definitely had our highs and our lows this past year, but the one thing that was consistent for the Corbett's was that we were able to see God at work in our lives and see His constant provision for us.
He has again and again shown his provision in a number of different ways to us this past year as we have at times walked a hard faith journey. I know that the Lord is teaching me so much right now about his plan for Joe and I, and while I don't always understand it and while I might not always like it, I know that God is good and His plans are perfect for us. I am determined to reflect on this truth as we enter we enter 2011 and I am looking forward to seeing what plans that the Lord does have in store for the Corbett's. I will do my best to keep you updated on here about what is going on in our lives and where the Lord is leading us! Happy New Year!
